Located close to Inariyoya Station in Higashi-Ueno, Sanji is a small ramen shop with only a 9-seat counter. Its signature dish is the rich niboshi ramen, packed with concentrated dried sardine flavor, made even more satisfying by thick slices of low-temperature-cooked chashu. The Mud Crab ramen, made with mangrove crab, combines crab broth with pork bone broth for a unique bowl that's drawing attention as a rarity even in Tokyo. The thin noodles from Asakusa Kaikaro are boiled firm, and the speed of service means your bowl arrives just minutes after ordering. A seasonal cold soba featuring scallop, tuna, or abalone liver appears every few days, and paired with the aewamen (noodles tossed in the leftover soup for a different flavor), it makes you want to keep coming back. The lunch hour tends to fill up, but turnover is relatively quick. The all-nonsmoking counter is easy to visit alone, and the shop is known for its bright, welcoming service and lively crowd of local regulars.
