The symbol of SALONE TOKYO is its signature dish since opening: octopus cooked slowly at low temperature, paired with a clam and potato espuma and orange oil. Many guests visit specifically for this dish's surprisingly tender texture and briny flavor. The monthly-changing course continues with squid ink taglioline, pasta using karasumi (dried mullet roe), meat dishes that showcase skillful cooking techniques, and granita and mousse made with seasonal fruits. In addition to a natural-wine-centered pairing chosen by the sommelier for each dish, non-alcoholic options using tea and fruit are also reassuringly available.
