Located between Jimbocho Station and Suidobashi Station, Ebimaru Ramen is a specialty ramen shop focused on lobster. The signature Ganso Ebimaru Ramen features a bisque-style soup made by simmering lobster heads for hours, resulting in a rich and smooth broth that clings nicely to medium-thick noodles. Countertop additions like sour cream and shrimp chili oil allow you to shift the flavor profile as you eat.
