Located just a short walk from Kitasenju Station, Kitasenju Niboshi Chukasoba Karen is a sister shop of the Kameido niboshi specialty restaurant Tsukihi, offering two signature styles: light and rich. The clear, soy-sauce-based light broth features the crisp texture of chopped onions and is loved as a bowl you can finish smoothly down to the last drop. In contrast, the rich broth layers niboshi and meat flavors so deeply it is dubbed "cement-style." Both soups cling exceptionally well to the low-hydration, snappy noodles. The combination of low-temperature cooked pork shoulder and tender, moist duck—2 types of chashu—elevates the level of satisfaction, while regular customers also look forward to imaginative limited-edition bowls and seasoned noodle refills (aedama) made with ingredients like sea urchin, squid, and corn.
