Located in an alleyway just off the bustling streets of Omotesando and a few minutes' walk from Harajuku Station, BASO reinvents conventional notions of soba by serving extra-thick ni-hachi soba noodles in tsukemen style. Its signature salted duck tsuke-SOBA features tender duck meat cooked at low temperatures that clings to the firm, chewy extra-thick noodles, accompanied by a rich dipping soup brewed from a blend of 5 varieties of dried fish flakes that leaves a lingering savoriness. Guests can freely use 5 kinds of tabletop condiments (yakumi)—such as nori seaweed, chive pepper, and tenkasu tempura bits—making it fun to customize the flavor as you eat. Other popular choices include the egg tempura rice, featuring a soft-boiled egg wrapped in a crispy batter, and the summer-only sudachi kelp water SOBA. The modern Japanese interior, finished with concrete tones and indirect lighting, offers only 16 counter seats and is entirely non-smoking. Though customers line up and order via a ticket vending machine, the thoughtful, attentive service is warmly praised, making it a comfortable spot to drop by even on your own.
