Located in an alley close to Shinjukugyoen-mae Station, Shanasoba Sawada is a shop with just 10 counter seats. Its signature dish is the kombusui tsukemen, featuring noodles coated in kelp water so rich and viscous that it draws threads; tasting the noodles first with just salt highlights the umami of the kelp and the sweetness of the wheat, while the dipping broth—available in either soy sauce or salt flavors—is praised for never becoming diluted to the very end. Guests can also choose clear soy sauce shinasoba, which harmonizes seafood and animal broths, or a flavorful, subtly sweet white soy sauce preparation. The smooth-skinned 2 kinds of wontons (shrimp and pork) along with low-temperature slow-cooked rare chashu add depth to every bowl. The owner-chef, who honed his skills at famous establishments, crafts each bowl individually with swift service. The clean interior, featuring black tones and natural wood, has partitioned seats so that even solo diners can focus peacefully on their noodles. The entire venue is non-smoking, and it is a welcome touch that you can enjoy a meal starting from around ¥1,000 for both lunch and dinner.
