Just a short walk from the Hijiribashi Exit of Ochanomizu Station, the signature of Selected Niboshi Shirimen Hatsushiro Nibosuke is its soup made by blending multiple varieties of dried sardines. Suppressing harsh bitterness while elevating umami, the rich back fat and the sweetness of onions layer together, picked up thoroughly by medium-thick curly noodles. All menu items come topped with 2 kinds of chashu: slow-cooked white chashu and thoroughly braised melt-in-the-mouth chashu, and a separate side of grated ginger lets you refresh the flavor midway through. The regular, medium, and large portions are all the same price, and the system of unlimited kaedama (extra noodles) and aedama (seasoned extra noodles) is the biggest specialty, which can also be enjoyed aburasoba-style with a bonito-flavored sauce. From 17:00 onward, a limited-quantity giant chashu ramen makes an appearance, alongside unique options like curry mazesoba accented with cilantro. The 23 counter seats encircling the central open kitchen in a U-shape are completely non-smoking and equipped with power outlets, making it easy to drop in alone.
