Ginza Ishii Gotanda is a tsukemen shop with its shop curtain hanging along Yamate-dori, just steps from Osaki-Hirokoji Station. The signature dish is a style of dipping noodles called "chuka seiro," pairing a rich yet smooth dipping soup brewed from Hinai jidori chicken and seafood with smooth, chewy medium-thick noodles jointly developed with Mikawaya Seimen. Instructions on the table guide you through a three-stage flavor progression: first as served, then squeezed with sudachi citrus, and finished with black shichimi pepper, offering the delight of shifting nuances in a single bowl. The chuka soba with its gentle chicken broth aroma and the thick-cut, tender chashu pork are also praised for their satisfying bite, while a curry-flavored nanban seiro is offered as a creative variation. The interior, with just 15 plain wood counter seats, has a calm atmosphere reminiscent of a traditional kappo restaurant, accompanied by polite, welcoming service.
