Tucked away in an alley in Noge, just a short walk from Sakuragicho Station, Tamari-La-Men Tomi's centerpiece is its light shoyu ramen, combining a clear chintan broth simmered from duck, chicken, and pork with the sharp kick of soy sauce. Rich depth and umami rise beneath the clean, light mouthfeel, while the bowl's character shifts depending on your choice of several noodle types, including whole wheat, silky, and hand-massaged varieties. The shio (salt) version offers the fun of dissolving truffle paste into the refined salt broth to transform its flavors, while seasonal limited editions—such as kombu water tsukemen, chilled ramen, and shijimi clam ramen—appear one after another. A luxurious assortment of low-temperature cooked chashu, featuring pork shoulder and duck breast, is another signature feature.
