Ajino Sanpei, regarded as the origin of Sapporo miso ramen, is a storied shop quietly tucked away on the 4th floor of the Daimaru Fujii Central building in the stationery department. Its signature miso ramen features a light white miso-based broth enriched by the savory umami of fragrant stir-fried onions, bean sprouts, and minced pork, gaining deeper flavor with every sip. It pairs brilliantly with medium-thick curly noodles specially co-developed with Nishiyama Seimen to catch the soup. Adding the spicy miso on the counter brings a pleasant twist to the taste, and customers also appreciate being able to order thick-skinned, juicy shumai from as few as 1 piece. The interior consists solely of a straight 10-seat counter steeped in a nostalgic Showa-era atmosphere, earning praise for the close-up view of the cooking process and brisk service. Fully non-smoking and welcoming to solo diners, it is a must-visit spot on any trip to experience the living history of Sapporo ramen.
