Sushi Arai is a hideaway sushi restaurant housed in a building in Ginza 8-chome, within walking distance of Higashi-ginza, Ginza, and Shimbashi Stations. The highlight is its uncompromising dedication to tuna: depending on the condition of each day's sushi topping (neta), the chef adjusts knife cuts and seasoned vinegar, earning acclaim for allowing guests to compare different cuts—from mineral-rich lean red meat to melt-in-the-mouth otoro. The preparation of side appetizers is equally meticulous, featuring the signature "ohagi" wrapping minced tuna scraping (nakaochi) and pickled daikon (takuan) in sushi rice (shari), monkfish liver paired with Narazuke pickles, and tenderly simmered abalone served with rice porridge cooked in its dashi (Japanese soup stock). The two-story layout offers different course meals between the B1 floor and 2nd floor; the counter maintains a dignified, posture-straightening atmosphere while naturally putting guests at ease through lighthearted banter with the chef. Private rooms are available for parties of 4 or more, and all seats are non-smoking. With reservations notoriously booked six months in advance, it is an ideal destination for anniversaries and dining with cherished companions.
