Toritani is renowned for its soup, which layers fragrant chicken oil with the pleasant acidity of a soy sauce tare. Prepared without chemical seasonings to condense the umami of chicken and seafood, the broth clings well to homemade medium-thin flat noodles that highlight the flavor and firmness of wheat. In addition to the signature chicken soba, the chicken-focused lineup is diverse, featuring a thick and rich aged-shoyu rich broth, creamy aged-shio, winter-limited miso, summer chilled ramen, and mazesoba. The moist low-temperature cooked chicken and rare pork chashu offer an enjoyable contrast in texture, while dishes like chicken tataki and chicken yukhoe are also praised as great accompaniments for a casual daytime drink. The modern Japanese, clean 12-seat interior is counter-focused, entirely non-smoking, and easy to drop into alone. With no reservations, lines can form before opening, but the base bowls priced under ¥1,000 are another reason for its strong following.
