Sip the clear soy sauce broth floating with ice cubes, and the savory umami of dashi (Japanese soup stock) emerges vividly despite the cold temperature—Sakaeya Honten's cold ramen is the original Yamagata specialty born at this shop in 1952. By simmering beef bones, letting the broth rest overnight to skim off the fat, and combining it with bonito and kelp dashi and an original blend of oil, they craft a soup where fat does not solidify even when ice is added. Said to feature La France pear juice as a secret ingredient, it yields a distinctive depth alongside chewy medium-thick noodles and lean beef chashu. The vegetable-packed Hiyashi Sakae Ramen and bowls topped with large wontons are also popular. In this standalone house retaining traces of the Showa era, featuring table seats in the front and tatami seating (zashiki) in the back, tourists and locals mingle in a lively atmosphere. Budgets are under ¥1,000 for both lunch and dinner, all seats are non-smoking, and parking is provided.
