Just a short walk from Kodemmacho Station, Tata Aji, featuring only 8 counter seats, has built a following for stamina chuka soba combining three lineages: Aomori extra-spicy scallion ramen, Ariran ramen, and Jiro-style. The signature stamina chuka soba features extra-thick curly noodles custom-ordered from Asakusa Kaikarou, bathed in a rich soy sauce soup melting with the sweetness of slowly sautéed onions and the depth of back fat. A classic way to enjoy it is sukiyaki-style, dipping the noodles and toppings into beaten raw egg, and many regulars make a stamina rice bowl by placing remaining toppings over rice. Also on offer are spicy stamina chuka with 5 heat levels to choose from, as well as seasonal tsukemen popular in summer. The unique ordering process uses smartphones followed by QR code ticket issuance, and before your bowl is served, the staff verbally check requests for free toppings like garlic and pork back fat. Overlooking the lively kitchen, the completely non-smoking counter seats are praised for an approachable atmosphere even for solo diners.
