Homemade Noodles No11 opened in 2019 along Yamate-dori, within walking distance of Oyama Station on the Tobu Tojo Line, offering 12 counter seats in a Jiro-inspired style. The owner, formerly a manager at Fujimaru, crafts the signature rich tonkotsu shoyu broth paired with homemade extra-thick flat-cut noodles that offer a pleasantly chewy texture. The thick-cut pork shoulder chashu is tender enough to crumble easily, while additions unusual for Jiro-style bowls—such as bamboo shoots, quail eggs, and narutomaki fish cakes—add unique character. Guests can select their noodle portion in detail; ordering a smaller portion uniquely comes with a raw egg, and enjoying flavor changes with the separately served seasoned back fat and tabletop ginger sauce adds to the experience. Garlic and vegetable quantities can be customized individually, making it easy to order even for first-time visitors, and the welcoming hospitality gives it a reputation for being comfortable for solo diners.
