Located on the 2nd floor of HOTEL MUSSE GINZA MEITETSU, Ginza Choshoku Lab is a buffet-style restaurant where you can freely choose from a vibrant array of small dish offerings. By arranging seasonal small side dishes across the signature 9-compartment tray, you can enjoy a variety of flavors little by little without them mixing together. The dashi shabu-shabu finished in the live kitchen is acclaimed for the superb match between its umami-rich golden broth and tender meat.
