The signature Shoyu no Umami Soba features a clear, amber-colored soup layered with rich chicken oil and the aroma of browned scallions, pairing harmoniously with supple thin noodles. The meticulous craft in each bowl also shines through in items like Shio no Umami Soba, which brings out a multi-layered depth of dashi (Japanese soup stock), and Tsukesoba, served with a classic clear broth offering a balance of sweetness, spiciness, and acidity. The side dish Buta-meshi, topped with fragrant seared chashu pork, is also widely popular.
