Nestled along the Aya River in Sakaide City, Kagawa Prefecture, Yamashita Udon is a traditional noodle factory continuing a history that began upon its founding in 1959. Dynamically boiled in a wood-fired cauldron that is now a rarity, the hand-cut udon offers the rich texture unique to irregularly sized noodles and a chewy, smooth finish. Pouring the dashi, which gently diffuses the flavors of dried sardines and kelp, over the udon you receive is a self-serve highlight true to authentic local style. A must-have topping is the famous Shiba shrimp kakiage packed with small shrimp; letting the crunchy batter soak up plenty of dashi is highly recommended. Opening at 08:30 in the morning, the shop is lively with people visiting on udon tours or for breakfast. Its charming, down-to-earth atmosphere—where you state what you ate after the meal and settle the bill with an abacus—is another part of its appeal.
