Operating out of a detached house in Gamagori City, Dashi Men Mirai is a ramen shop famous for its homemade noodles and soup crafted to delicately draw out the umami of dried sardines (niboshi). The signature Dashi Soba features a clear, deep dashi with minimal bitterness, paired with straight, bitey whole-wheat thin noodles. Alongside the rich flavors of salt and soy sauce, a staple style is ordering the seasoned extra noodles called aedama (kaedama with seasonings) to enjoy changes in flavor.
