Guests can also choose seasonal specials, such as rich niboshi soba with an even thicker consistency than tsukemen, special niboshi aedama (seasoned replacement noodles), and chilled niboshi soba in the summer. To finish, diners can adjust the richness using the tabletop seafood dashi broth, making it delightfully clean to sip to the very end. This compact shop has only 9 counter seats, drawing crowds who line up before opening. The entire venue is non-smoking, with a lively atmosphere that welcomes solo diners.

[Chilled Niboshi Soba 2026] ❄️ On sale starting 8/10! Price: from ¥1,500 That time of year has arrived once again. Niboshi Tsukemen Miyamoto's summer classic, "Chilled Niboshi Soba 2026" Umami extracted from several varieties of niboshi (dried sardines) and kombu (kelp), crafted into an ice-cold soup. The robust umami of dried sardines is definitely there. Yet, it has been finished into a bowl you can refreshingly drink down to the last drop! The noodles are flat noodles designed to match perfectly with the cold soup. And this year, the toppings are even more luxurious: 2 kinds of Tanohata duck Tomato steeped in Dashi (Japanese soup stock) Onion - Shredded white scallion - Okra - Shiso leaf (oba) - Myoga (Japanese ginger) - Nori seaweed Combined with summer Condiments (yakumi) and ingredients, its character transforms with every bite. [Noodle Portions] Regular: 150g Medium: 250g +¥100 * Choose between soy sauce or salt * Extra toppings available And finally... Finishing with rice is highly recommended! Add rice to the remaining cold niboshi soup with a touch of the accompanying wasabi. It goes together amazingly well. We make it every year, and this year we have upgraded it thoroughly once again.
