The centerpiece at Usagi no Kaku Matsudo Honten is aburasoba, featuring extra-thick, chewy noodles reminiscent of udon tossed in a rich seafood soy sauce tare. The noodles, made fresh daily in the workshop at the back of the shop, offer strong bounce and chew. A well-established way to enjoy the bowl is by adding the free wari-soup (seafood and pork bone broth) midway through to transform the experience into tsukemen-style and finally ramen-style across three stages. The ramen served in a rich seafood-pork bone soup combining chicken, pork, and beef with bonito and mackerel flakes, as well as the tsukemen with shredded char siu in a fish powder and pork bone dipping sauce, are also widely favored. Thickly sliced smoked char siu and melting, soft-boiled smoked eggs add further substance. With a compact layout of only 15 counter seats, solo diners are common, and the queue moves briskly as orders are taken while waiting in line. Open continuously from 11:00 to 22:00, it is an easy spot to visit, just a 4-minute walk from Matsudo Station.
