Hinode Seimenjo is a Sakaide City, Kagawa Prefecture noodle factory operating since 1930 that opens its doors for dining for just 1 hour at lunch. Once you receive your bowl of noodles, you pour your own dashi (Japanese soup stock), snip the table scallions with scissors, and pay via an honor system—a timeless tradition that has become a signature attraction in itself. Highly popular is the cold udon with its smooth throat-feel and pronounced firmness, where simply pouring dashi over the noodles highlights the rich wheat aroma. Many also recommend the kamatama udon, served thick and smooth with a coating of raw egg. Although long queues form before opening, the staff guides customers efficiently for quick turnover, and visitors are constantly amazed by prices that leave them fully satisfied for just a few hundred yen even with multiple toppings.
