Menya Shugo is a tsukemen specialty shop with only 5 counter seats, located on a side street just a short walk from Shimbashi Station. Its signature tsukemen is known for the rich, creamy seafood-pork bone dipping sauce that clings well to the medium-thick to thick noodles. The noodles are a custom order made from Fukuoka Prefecture wheat, and their wheat aroma and firm texture that emerge with each bite have won them many fans. Three types of chashu—pork belly, shoulder loin, and chicken—are served on a separate plate, letting you compare their textures and fat content, and options include a special version with extra roasted pork and a tsukemen with a runny soft-boiled egg. For the soup dilution after the meal, herbs, rice, and nori are served separately, allowing you to enjoy it to the last drop in a rice-porridge or ochazuke style—a feature often mentioned as a signature touch.
