Just a short walk from Suidobashi Station in Kanda Misakicho, Sabameshi no Sabasho is a 15-seat eatery filled with the appetizing aroma of mackerel grilled over an open flame behind the counter. Its signature sabameshi features fish with crisp skin and tender, fluffy flesh. Mixing the flaked meat directly into the rice releases its deep umami, which is known for its mild saltiness that brings out the sweet richness of the fish's natural oils. Following the restaurant's displayed "Sabameshi Etiquette," guests typically enjoy the bowl in three stages: first as is, then with condiments (yakumi) and sesame, and finally finished as dashi (Japanese soup stock) chazuke.
