Operating since 1972 out of a standalone roadside building in Taromaru Honmachi, Toyama City, Itosho Main Store is best known for its motsu nikomi udon, featuring generous portions of pork offal simmered in a spicy garlic-infused miso soup. Because each clay pot is cooked individually over burners lining the counter, the sight of chefs managing the pots right in front of guests has become an attraction in itself. The noodles are hand-stretched Himi udon from Kaizuya, praised for their flat, chewy texture that holds its firmness even when simmered and clings well to the broth. Regulars often customize their bowls, adding a raw egg for a milder flavor or opting for the curry flavor that is said to be exclusive to the main store. Despite long lines forming every day, the operation is efficient, with diners purchasing meal tickets before lining up.
