The centerpiece of Menya Fujishiro is its rich tori paitan broth, simmered over many hours by combining whole Daisen chicken with veal bones, fragrantly roasted beef, and seafood. Although velvety and creamy on the palate, the aftertaste is surprisingly light, and thin straight noodles cling tightly to its full-bodied flavor. Adding the house ginger lemon midway through instantly shifts the richness into a refreshing finish, letting diners experience two distinct flavor profiles in a single bowl. The tender chashu prepared using a two-stage low-temperature process and the runny soft-boiled seasoned egg are also widely praised, and there is also a tori paitan tsukemen option made with thick, chewy noodles. Enclosing the open kitchen, the intimate space has only 11 counter seats and is entirely non-smoking.
