The signature dish of Ramen Kasumi Awaza Honten is a clear bowl combining dried sardines from Kujukuri, kelp, and dried shiitake mushrooms with an aged tamari soy sauce base. Another signature item is the dried sardine mazesoba, a dish mixed with a sweet, rich sardine soy sauce base, chunky rare-cooked chashu, and a seasoned egg.
