Quail House's signature dish is thin-cut nihachi soba served in Togakushi's traditional bocchi-mori style, where noodles are bundled into bite-sized portions. Thoroughly chilled in cold water for a clean, smooth finish down the throat, many guests order a large portion; the shop uses local buckwheat flour ground by stone mill during the severe winter cold, reputedly serving the vibrant flavor of fresh soba all year round. Mushroom tempura like maitake fried lightly in sesame oil, melt-in-the-mouth sweet sweet potato tempura, and sobogaki enjoyed with various condiments (yakumi) are also popular, traditionally followed by a finish of thick sobayu broth. Opened in 1967 with a traditional folk-house ambiance, the interior features only tatami seating (zashiki), with second-floor views overlooking ancient cedar trees earning wide praise. The shop takes no reservations and operates strictly on a walk-in waiting board at the entrance; visitors customarily sign their names, pay homage at Togakushi Shrine Chusha, and then return. Even during peak rush hours, attentive and warm hospitality directed to each guest makes any wait worthwhile.
