Standing along Senkawa-dori right next to Kasuga Station, Honkare Chuka Soba Restaurant "Gyorai" greets guests with an unusual sight for a ramen shop: rows of coffee siphons lined up across the counter. Utilizing a unique extraction method that brews Makurazaki honkarebushi bonito flakes in a siphon for every single serving, its clear double soup combining seafood and animal broths is reputed for a gentle flavor that invites you to drink every last drop. It is paired with custom-ordered thin noodles made with whole-wheat flour from Hokkaido's Haru yo Koi wheat, delivering an enjoyable aroma and a pleasant bite. The separate topping plate, allowing you to choose 3 items from options such as seared chashu pork, bamboo shoots, and quail eggs, lets diners build their bowl to their liking without compromising the soup's delicate balance. In the summer, zaru chuka made with Akita Inaniwa-style noodles also makes an appearance. With a calm, white-toned interior accompanied by jazz music, all 13 seats are strictly non-smoking; the attentive service makes it comfortable for solo diners, making it a great destination for lunch or a bowl after drinks.
