Just a short walk from Tokyo Metro Tsukiji Station, tucked in a Shintomi alley, Kagaribi is a soy sauce ramen specialty shop with only 6 counter seats. The highlight here is watching the owner work solo, slicing and hand-kneading the noodle dough right before your eyes with each order. The signature soy sauce ramen features a clear broth combining multiple branded jidori chicken stocks with several kinds of soy sauce, celebrated for how the fragrant chicken oil and deep savory depth unite with the handmade wavy noodles. The seasoned soft-boiled egg with its melty yolk and the thick, tender chashu pork are also popular, while tsukemen layered with seafood and meat dashi (Japanese soup stock) alongside meat rice are also delightful options. The wood-toned interior is entirely non-smoking, quiet, and calm, making it easy to visit for a solo lunch or a bowl after work. Budget around ¥1,500 during the day and ¥2,000 at night; knowing ahead of time that reservations are not accepted (no reservations) and payment is entirely cashless makes entering seamless.
