Ginza Shinohara's signature dish is its hassun, featuring around ten items themed around calendar events like Tanabata and Nagoshi no Harae, served while the head chef dims the lights and tells their origins in an unforgettable moment. The Omakase (chef's choice) course changes monthly and includes foie gras monaka with a crisp, fragrant shell and rich filling, summer ayu compared by region of origin, and softshell turtle rice porridge using different parts of the meat. Clear soups featuring tilefish or matsutake mushroom, along with the closing clay-pot rice and mizuyokan, are also well regarded. Many guests also enjoy additional orders such as king crab and Omi beef fillet katsu. With only 13 seats at a plain-wood counter, located in the basement of a building down a back alley, the setting has the feel of a hidden gem. The head chef and a young cook chat with guests in a friendly way, allowing for a relaxed atmosphere despite the refined air. The restaurant is reservation-only and entirely non-smoking, making it a popular choice for important gatherings and anniversaries.
