Just a short walk from Higashi-Ginza Station, in an alley across from the Kabuki-za, Sushi Ginza Onodera is an Edomae sushi restaurant with counters on the basement floor and the second floor. Through the polished single-plank hinoki counter, you can watch the chef's hands up close; the atmosphere is dignified yet lively with energetic calls from the staff, making it a place where you can relax without feeling too formal. Only a seasonal omakase course is served, beginning with a chilled chawanmushi that reveals gleaming ikura the moment its lid is opened, followed by kuruma ebi served both raw and boiled for comparison, uni comparing murasaki and bafun varieties, and melting chutoro and otoro, before finishing with a matcha blancmange for a lasting aftertaste. Thoughtful touches extend to refilling tea and adjusting the size of the sushi rice, and with attentive support for birthday and anniversary surprises, it is chosen for special dinners and dates.
