The dough, made through low-temperature long fermentation, has a crisp light edge and a chewy interior. The signature 'Japanese umami' pizza, layered with dried shiitake mushroom puree, dried mackerel, and kombu, reflects the chef's background in kaiseki cuisine, and has earned recognition at international pizza competitions.
