Located a few minutes' walk from Iidabashi Station, down the stairs into the basement of a Kagurazaka multi-tenant building, Carbonara Senmonten Hasegawa Kagurazaka opened in 2020. The classic dish features a rich sauce crafted without cream using only eggs and cheese, subtly flavored with Japanese dashi (Japanese soup stock) from kelp and bonito flakes, thick-cut bacon, and black pepper—a combination that some diners call the best of their lives. The menu also offers cross-cultural varieties spanning Japanese and Western flavors, including sansho pepper, lemon, fresh wasabi, and Korean-style, with regulars often ordering several varieties to share and compare. Jazz plays in the dimly lit, bistro-style interior, where all 24 seats (including 6 counter seats) are non-smoking. The attentive service, complete with a deep bow at departure, makes an impression. Lunch with a salad makes it easy to drop by alone, while evenings invite a leisurely time paired with wine.
