Bakery bank is set inside a repurposed complex in Nihonbashi Kabutocho that preserves the traces of a former bank. With exposed concrete and heavy doors left intact, the interior feels like stepping into a street corner abroad. The signature item is the high-hydration, low-temperature, long-fermented loaf Sourdough BANK, marked by a moist, chewy texture and the subtle acidity unique to sourdough starters. Croissants folded with original aged fermented butter are crisp on the outside and airy inside, captivating with their beautiful layers. The lineup also includes curry bread coated in sourdough breadcrumbs, croissant-dough cinnamon rolls, and mentai baguette, proving popular enough to form lines right after opening. Terrace seats sit beside a large olive tree near the entrance, and opening at 8:00 makes it convenient for strolls or morning office takeout.
