The hallmark of Kumamoto Ramen KOKUTEI HONTEN is its tonkotsu soup accented by the fragrant aroma and mild bitterness of handmade roasted garlic oil (mayu). Simmered using only pig skull bones, it is lighter than its strong aroma suggests, offering a lasting richness with subdued greasiness. For the signature egg ramen, the shop recommends first tasting the soup as is, and in the latter half, breaking the egg yolk with a soup spoon to mix it into the noodles and toppings. Diners can also enjoy flexible combinations, such as pepper-accented fried rice packed with chunky chashu pork or the half-portion Chibitama Ramen. While founded in 1957, the shop remains orderly and clean, with 7 counter seats and 24 table seats, completely non-smoking.
