Sugita, Nihonbashikakigaracho is a 9-seat sushi restaurant located in a basement just a short walk from Suitengumae Station; taking a seat at the gently curved single-slab wooden counter marks the beginning of a theatrical experience observing the master's movements up close. The kohada (gizzard shad), often served as the first piece, is said to have its curing method and slicing adjusted daily according to the origin and condition of each fish, followed by tuna ranging from lean akami to medium-fatty chutoro and fatty otoro, succulent kuruma prawn, and sea urchin whose sourcing shifts with the seasons. The sushi, gently rounded with softened edges, is said to sink softly and become one on the palate, complemented by appetizers such as freshwater eel chawanmushi and salt-grilled cutlassfish, as well as pairings like monkfish liver accompanied by kijoshu sake. The menu consists solely of an omakase of appetizers and nigiri, with the option to add sushi rolls toward the end.
