Founded in 1893, Usamitei Matsubaya is a historic shop in Minamisenba near Shinsaibashi that proudly preserves its tradition as the birthplace of kitsune udon. Its famous kitsune udon features a plump, large deep-fried tofu pouch that covers almost the entire bowl; take a bite, and the elegant, sweet and savory simmering broth harmonizes with the dashi (Japanese soup stock) to fill your mouth. The simple deliciousness created by the soup flavored with kombu and dried bonito flakes, paired with the chewy, gentle texture of traditional Osaka udon, is truly exceptional.
