Hanging its noren near Fushimi Station, Shimasho's signature offering is its famous doteyaki (miso oden), gently simmered in a large pot. Daikon radish and beef sinew, simmered in Hatcho miso until pitch black, are not salty despite their rich appearance; instead, the deep umami of dashi (Japanese soup stock) and a gentle sweetness penetrate all the way to the core. Other must-try favorites include miso kushikatsu, featuring crispy batter coated in a sweet-and-savory miso sauce, and dote omurice, where soft, runny half-cooked eggs blend harmoniously with beef sinew. At the 1st-floor counter seats retaining the nostalgic ambiance of the Showa era, solo diners can casually enjoy drinks alongside affordable appetizers. The upper floors offer reservation-only private rooms, making the restaurant widely popular for everything from sightseeing visitors eager to taste Nagoya specialties and after-work drinks to gatherings with good friends.
