Founded in 1954, Miyake Udon is a long-established shop carrying on the tradition of soft Hakata udon. Its signature Maruten Udon is a bowl in perfect harmony, combining a large round minced fishcake tempura that fills the bowl with extra-thick noodles so fluffy and soft they can be cut with chopsticks. The clear dashi (Japanese soup stock), infused with the gentle umami of kombu kelp and dried fish flakes, permeates both noodles and tempura, soothing the body with simple and profound richness. Crispy kakiage-style burdock root tempura udon and mildly tart inari sushi, which can sell out past noon, are also not to be missed. The kitchen lined with large cauldrons and tokkuri (sake flask) decanters, along with a lustrous dark zelkova counter, evokes an early Showa atmosphere where solo diners can easily drop by for a quick and warming meal.
