At Udon Shokunin Sanuki Mennosuke, diners can experience the live craft of the master, who cuts the noodles by hand with a knife only after receiving an order and boils the fresh dough on the spot. The charmingly irregular, extra-thick hand-cut noodles offer a robust, firm chew that pairs wonderfully with the deeply aromatic iriko dashi (Japanese soup stock). Popular choices include the signature Sanuki udon topped with kamaage shirasu (boiled baby sardines) and bonito flakes, as well as piping-hot, generously sized toriten (chicken tempura) and whole-skewer chikuwa tempura.
