Just a short walk from Ningyocho Station, TANIYA is a Sanuki udon specialty shop dedicated to the authentic craft of serving noodles freshly made, freshly cut, and freshly boiled. Having honed his skills at a celebrated shop in Kagawa, the owner prepares the dough every morning by foot-kneading, adjusting for the day's weather and humidity to create noodles characterized by their thickness, springy chew, and smooth finish. The additive-free and chemical-free dashi broth, slowly extracted over many hours from dried sardines (iriko) and kelp, is praised for a gentle savory depth that you can enjoy down to the last drop. The signature dish is the Kashiwaten Udon, generously topped with chicken tempura and assorted vegetable tempura, while the TANIYA Special—featuring shrimp tempura, soft-boiled egg tempura, beef, and more—is also a favorite. Noodle portions can be upgraded from regular to large at no extra charge, making it easy to match your appetite. The interior offers counter seating for 12 as its centerpiece and is completely non-smoking, allowing solo diners to casually drop in and savor a bowl while listening to the rhythmic sounds of noodles being cut up close.
