Down a back alley in Ebisu, behind an unassuming entrance, Udon Yamacho is run by a long-established bonito flake wholesaler, and the fragrance of clear dashi runs through every dish. The signature offering is a set that moves from appetizers through tempura and udon, finishing with either takikomi gohan or warabi mochi, giving what is essentially an udon restaurant the flow of a small kaiseki course. Each dish is carefully made, from dashimaki tamago that oozes with dashi, to simmered beef tendon rich enough to call for rice, to plump, generously sized shrimp tempura. There is also the option to compare bonito-based and sesame-based sauces, and seasonal udon that changes by the day of the week is said to be offered as well. The wood-toned interior, with well-spaced seating, is entirely non-smoking, drawing lines at lunchtime, while in the evening it suits meals over sake or a date. Private hire is available for groups of 20 or more.
