The signature Niboshi Soba (Light) harmoniously blends around 6 kinds of dried sardines without extracting any harsh bitterness; known for its deep umami paired with a crisp, refreshing finish, the chewy medium-thick noodles lift the soup exceptionally well. The Abura Niboshi Soba with added pork back fat softens the soup while preserving the sardine aroma, earning a reputation for its smooth, light mouthfeel.
