Bearing a large white noren and paper lanterns along an Akasaka alley, Nakago cooks purely with pork bones without clouding the broth, producing a clear, golden soup akin to consomme. The signature pure pork soba is served in two varieties: a fragrant soy sauce version accented with charred soy sauce and back fat, and an elegant salt version scented with yuzu, both harmonizing with the firm bite of thin noodles and pork umami. The thick-cut, tender low-temperature chashu is highly acclaimed, and diners can enjoy adding a soft-boiled seasoned egg. The visual elegance recalls traditional Japanese cuisine, from colorful garnishes like salmon roe and radish to the deliberate care of aligning the noodles with a comb.
