The signature dish of Sesshishio Fish Oil Menkabo Sanku is its kake ramen, strikingly presented with a whole dried sardine floating on top, where an elegant soy sauce kaeshi sharply balances the savory umami and subtle bitterness of the niboshi. The foundation lies in an original preparation method that steeps domestic niboshi in alkaline ionized water for a full day to extract flavor, combined with a blend of two soy sauces aged for one year. The shop also uses distinct noodles from Nishiyama Seimen in Hokkaido tailored to each bowl. Guests can enjoy a diverse selection, including tsukemen paired with extra-thick whole-wheat noodles resembling udon, the yuzu-scented White Pot, the tamari soy sauce Black Pot, and the niku-kake loaded with thick-cut chashu pork. Changing the flavor midway using shichimi, which the shop playfully refers to as 'medicine' (kusuri), is a favorite ritual among regulars. The staff is well regarded for their pleasant service, from guiding diners at the ticket vending machine to warmly seeing them out. With 15 counter seats and a completely non-smoking environment, it is widely known as a popular shop that draws queues outside even on weekdays.
