The centerpiece of Junteuchi Men to Mirai is its wide, extra-thick noodles crafted by hand-kneading, hand-cutting, and hand-crimping Mochihime brand wheat flour. Reminiscent of udon or houtou, their texture—soft and chewy on the outside with a firm bite inside—is praised as truly one of a kind. Diners enjoy choosing between the clear special salt ramen, infused with flavors of chicken, seafood, and kelp, and the rich soy sauce ramen with ginger-like aromas; for first-time visitors, the bowl topped with large wontons packed with shrimp is frequently recommended. Some guests also add tender chashu pork that can be cut with chopsticks, or fragrant seared pork rice. In the summer, limited-edition chilled ramen featuring bonito and sea bream dashi (Japanese soup stock) accented with Japanese sansho pepper and green shiso appears, which is popular for highlighting the noodles' firmness even further.
